Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them to prevent sticking.
  2. In a medium bowl, combine the flour, baking powder, and salt; set aside.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add the eggs one by one, ensuring each is well combined before adding the next, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  6. Fold in the melted white chocolate and mashed raspberries gently.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
  9. While the cakes cool, prepare the raspberry sauce by cooking fresh raspberries, sugar, and lemon juice in a saucepan over medium heat until thickened.
  10. For the frosting, beat the softened butter and powdered sugar until creamy.
  11. Cool the cakes completely before frosting them.
  12. Spread a layer of frosting on the first cake layer, drizzle with raspberry sauce, then place the second layer on top and frost.
  13. Garnish with fresh raspberries and drizzle the remaining raspberry sauce before serving.
