Delightful fusion of soft, chewy cookies filled with creamy cheesecake.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for cheesecake filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
  3. Cream the butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in the semi-sweet chocolate chips.
  7. Beat the cream cheese, powdered sugar, and vanilla extract for the filling until smooth and creamy.
  8. Flatten a tablespoon of cookie dough in your palm, add 1 teaspoon of cheesecake filling, and top with another tablespoon of cookie dough.
  9. Seal the edges and place on the prepared baking sheet, spacing them 2 inches apart.
  10. Bake for 10-12 minutes until golden around the edges.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle sea salt on top before baking or add a dash of cinnamon.
