A delightful dish that combines savory and sweet flavors with juicy chicken thighs, perfect for family dinners or gatherings.

Ingredients

  • 1 lb – 1.3 lbs boneless, skinless chicken thighs
  • 2 tbsp ketchup
  • 3 tbsp agave
  • 4 tbsp rice vinegar
  • 4 tbsp canned pineapple juice
  • 1 tbsp sesame oil
  • 2 tbsp avocado oil (or any cooking oil)
  • 1 tsp ginger, minced
  • 4 garlic cloves, minced
  • 3 tbsp soy sauce

Instructions

  1. Combine all the marinade ingredients in a medium-sized bowl or large zip lock bag.
  2. Add the chicken thighs to the marinade and ensure each piece is fully coated.
  3. Marinate the chicken in the refrigerator for anywhere from 3 hours to 24 hours.
  4. Preheat a cast-iron skillet or grill over medium-high heat.
  5. Remove the chicken from the marinade and place it in the skillet or on the grill.
  6. Cook for approximately 6-8 minutes on each side until thoroughly cooked.
  7. Serve alongside rice and vegetables for a complete meal.

Notes

For added smoky flavor, toss wood chips on the grill. Adjust flavors with crushed red pepper flakes or hot sauce in the marinade for spice.
