A delightful and satisfying meal featuring tender chicken cooked with zesty salsa and taco seasoning in a crockpot.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning (or about 2 tablespoons homemade seasoning)
  • 1/2 cup low-sodium chicken broth (or water)
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • Corn or whole wheat tortillas, warmed
  • Optional toppings: Chopped cilantro, diced tomatoes, avocado slices, shredded lettuce, lime wedges, low-fat shredded cheese, Greek yogurt, or light sour cream

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour in the salsa and low-sodium chicken broth (or water). Add chopped onion and minced garlic if using.
  4. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken in the crockpot with two forks and mix with the juices.
  6. Warm the tortillas in a skillet or microwave.
  7. Assemble the tacos by filling a warm tortilla with shredded chicken and desired toppings.
  8. Serve and enjoy!

Notes

Consider marinating the chicken in salsa and taco seasoning overnight for enhanced flavor. Use pre-cooked rotisserie chicken for a quicker meal.
