A delightful frozen treat that captures the zesty essence of Key lime pie, perfect for summertime indulgence.

Ingredients

  • 2 cups heavy whipping cream
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed)
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • Pinch of salt (optional)

Instructions

  1. Whip the heavy whipping cream until stiff peaks form, about 3-5 minutes.
  2. In another bowl, combine sweetened condensed milk, key lime juice, key lime zest, and vanilla extract. Stir until smooth.
  3. Gently fold the whipped cream into the key lime mixture in batches.
  4. Fold in half of the crushed graham crackers.
  5. Pour the mixture into a freezer-safe container, sprinkle remaining graham crackers on top, and swirl gently.
  6. Cover and freeze for at least 6 hours or overnight until firm.
  7. Before serving, let sit at room temperature for a few minutes to soften.

Notes

For a lighter version, substitute coconut cream for heavy cream. Ensure to use freshly squeezed lime juice for the best flavor.
