Delightful sugar cookies decorated with royal icing, perfect for any occasion.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 teaspoon salt
  • 4 cups powdered sugar, sifted
  • 3 tablespoons meringue powder
  • 6–8 tablespoons water
  • Gel food coloring in white, pink, and light blue

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and optional almond extract, mixing until incorporated.
  4. Gradually add the flour and salt to the mixture, mixing until combined.
  5. Divide the dough into two portions, wrap in plastic, and refrigerate for at least 1 hour.
  6. Roll out the chilled dough to 1/8-inch thickness and cut out dove shapes.
  7. Bake for 8-10 minutes until edges are lightly golden. Cool on baking sheets for a few minutes before transferring to a wire rack.
  8. Prepare royal icing by mixing sifted powdered sugar with meringue powder and enough water for a pipeable consistency.
  9. Color the icing with gel food coloring and decorate the cooled cookies.
  10. Allow decorating icing to dry completely before serving.

Notes

For best results, use softened butter and refrigerate the dough. Allow each icing layer to dry before adding more colors.
