A delightful and sophisticated quiche featuring creamy ricotta cheese and vibrant spinach, perfect for brunch or a light meal.

  • 1 9-inch pie crust
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the pie crust into a 9-inch tart or pie pan and prick the bottom with a fork.
  3. Heat the olive oil in a medium-sized pan over medium heat and add the chopped spinach. Sauté until wilted, about 2-3 minutes.
  4. Whisk together the eggs, ricotta cheese, heavy cream, grated Parmesan, salt, black pepper, and nutmeg in a large mixing bowl until smooth.
  5. Stir in the sautéed spinach into the egg mixture.
  6. Pour the filling into the prepared pie crust, spreading it out uniformly.
  7. Bake for 35-40 minutes until the center is set and the top is lightly golden.
  8. Allow to cool slightly before slicing into wedges.

Notes

Consider adding garlic or onion to the sautéed spinach for more depth. Experiment with other vegetables or herbs for variation.
