A delightful quiche that combines creamy ricotta with fresh spinach for an elegant, comforting dish perfect for gatherings or light dinners.

  • 1 9-inch pie crust
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the pie crust into a 9-inch tart or pie pan and prick the bottom with a fork.
  3. Heat the olive oil in a medium-sized pan over medium heat, then add the chopped spinach. Sauté until wilted, about 2-3 minutes.
  4. In a large mixing bowl, whisk together the eggs, ricotta cheese, heavy cream, grated Parmesan, salt, black pepper, and nutmeg until smooth.
  5. Stir in the sautéed spinach into the egg mixture.
  6. Pour the filling into the prepared pie crust, spreading it out uniformly.
  7. Bake for 35-40 minutes until the center is set and the top is lightly golden.
  8. Allow to cool slightly before slicing into wedges.

Notes

Use low-fat ricotta for a lighter version and consider adding other vegetables like roasted red peppers or mushrooms for variety.
