Ingredients

Scale
  • 1 lb ground beef (80% lean)
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • 1 fresh jalapeño, sliced
  • 1/2 red onion, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce (adjust for spice level)
  • 1 tablespoon ketchup
  • Salt and pepper to taste
  • Lettuce, for garnish (optional)
  • Pickles, for garnish (optional)

Instructions

  1. Preheat your grill or stovetop griddle over medium-high heat.
  2. Combine mayonnaise, Sriracha, ketchup, and a pinch of salt and pepper to create spicy mayo.
  3. Form the ground beef into four patties, seasoning with salt and pepper.
  4. Oil the grill lightly with olive oil.
  5. Cook the patties for about 4-5 minutes per side until browned and at 160°F internal temperature.
  6. Add a slice of pepper jack cheese to each patty toward the end of cooking.
  7. Toast the hamburger buns until golden brown.
  8. Assemble the burgers by spreading spicy mayo on the bottom half of each bun.
  9. Add the cooked patty, followed by jalapeño slices, red onion, and any optional toppings.
  10. Top with the other half of the bun and serve immediately.

Notes

Adjust spiciness using more or less Sriracha and jalapeños. Let burgers rest after cooking for juiciness.
