  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados
  • 1 cup cherry tomatoes
  • Fresh corn from 1 ear of sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper
  • 1 jalapeño pepper
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Whisk together the olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, optional chipotle chili powder, and pepper in a small bowl.
  2. Massage the rub evenly onto the chicken breasts, ensuring each piece is well coated in the spices.
  3. Rest the marinated chicken for at least 30 minutes at room temperature or refrigerate for up to 8 hours.
  4. Heat a grill pan over medium-high heat, lightly greasing the surface. Add chicken and cook for 3-5 minutes on one side until golden brown.
  5. Flip the chicken, cover with a lid, and reduce heat to medium. Cook for an additional 5-7 minutes until fully cooked. Let chicken rest for 5 minutes before slicing.
  6. Combine all salsa ingredients (except avocados) in a mixing bowl and chill while the chicken cooks.
  7. Fold chopped avocados into the salsa mixture, adjusting seasoning as needed.

Notes

For best results, marinate chicken longer and use ripe avocados. Taste and adjust salsa seasoning accordingly.
