  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/4 teaspoon salt
  • 1 egg white or 3 tablespoons meringue powder
  • 1 3/4 cups powdered sugar for icing
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper.
  2. Whisk together the all-purpose flour, powdered sugar, and salt in a medium bowl.
  3. Cream together the softened butter, vanilla extract, and almond extract in a separate large bowl until light and fluffy.
  4. Add the dry ingredients gradually to the butter mixture until a soft dough forms.
  5. Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  6. Roll the dough out to about 1/4-inch thickness and cut out shapes with a floral cookie cutter.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Allow the cookies to cool on a wire rack.
  9. Prepare the royal icing by beating egg whites or meringue powder, then adding powdered sugar and lemon juice.
  10. Divide the icing and tint with gel food colors.
  11. Decorate the cooled cookies with the royal icing.
  12. Let the icing set before serving.

Notes

For fine detail in icing, practice piping on parchment paper. Allow icing to dry completely overnight.
