  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 pinch of salt
  • 1 egg white or 3 tablespoons meringue powder
  • 1 3/4 cups powdered sugar (for icing)
  • 1/2 teaspoon lemon juice
  • Gel food colors (pink, purple, green, yellow)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter with powdered sugar until light and fluffy.
  3. Add the vanilla and almond extracts, along with a pinch of salt, mixing until combined.
  4. Gradually incorporate the flour, adding it in 1/4 cup at a time until the dough comes together.
  5. Roll out the dough on a floured surface to about 1/4 inch thickness.
  6. Cut out floral shapes using a cookie cutter and transfer them to the baking sheet.
  7. Bake for 8-10 minutes or until lightly golden around the edges.
  8. Cool the cookies completely on a wire rack.
  9. Whisk the egg white or meringue powder with lemon juice until frothy for the royal icing.
  10. Gradually add powdered sugar to the icing until smooth and stiff peaks form.
  11. Divide the icing into bowls, adding gel colors to create various shades.
  12. Outline and fill in the cookies with royal icing to create floral designs.
  13. Allow the cookies to dry for at least 2-3 hours before serving.

Notes

Ensure butter is at room temperature for best results. Don’t rush the cooling process before icing.
