  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1/4 cup unsulfured molasses
  • 1 teaspoon vanilla extract
  • 2 large egg whites (or 2 teaspoons egg white powder)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon lemon juice
  • Food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the all-purpose flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt in a medium bowl.
  3. Cream together the softened butter and brown sugar in a large bowl until light and fluffy.
  4. Add the egg, molasses, and vanilla extract to the butter mixture, mixing until well combined.
  5. Incorporate the dry ingredients gradually into the wet mixture until a dough forms.
  6. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  7. Cut out shapes using cookie cutters and place them on the prepared baking sheets.
  8. Bake for 8-10 minutes or until the edges are slightly browned.
  9. Cool the cookies completely on a wire rack.
  10. Prepare royal icing by beating the egg whites until stiff peaks form, then gradually adding powdered sugar and lemon juice until smooth.
  11. Divide the icing into bowls and add food coloring for decorating.
  12. Decorate the cooled cookies using the icing and allow it to dry completely before serving.

Notes

For best results, chill the dough if it feels too soft to roll out. Keep an eye on baking time to avoid overbaking.
