A comforting dish featuring tender beef, caramelized onions, and egg noodles in a rich savory broth, topped with melted Swiss cheese.

  • 1 lb beef stew meat
  • 2 large onions, sliced thinly
  • 3 cups beef broth
  • 1 tablespoon olive oil
  • 2 cloves minced garlic
  • 1 teaspoon thyme
  • 1 tablespoon Worcestershire sauce
  • 8 oz egg noodles
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onions and stir frequently until caramelized, about 15-20 minutes.
  3. Brown the beef stew meat in a separate pot over medium-high heat for about 5 minutes.
  4. Combine the caramelized onions with the beef, add broth, thyme, Worcestershire sauce, salt, and pepper.
  5. Simmer for 1 to 1.5 hours until the beef is tender.
  6. Prepare egg noodles according to package instructions.
  7. Stir in cooked noodles into the beef mixture, taste and adjust seasoning.
  8. Top with shredded Swiss cheese and cover until melted.
  9. Garnish with fresh parsley before serving.
