A delightful treat that elevates the classic cookie experience with a festive twist, filled with rich chocolate chunks and refreshing peppermint.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chunks
  • 1/2 cup crushed peppermint candies
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • Crushed peppermint candies (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chunks and crushed peppermint candies.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are golden and the centers remain soft.
  9. Cool cookies for about 5 minutes before transferring to a wire rack.
  10. Whip the softened butter for the frosting in a bowl until creamy, then gradually add powdered sugar, milk, vanilla extract, and peppermint extract, beating until smooth.
  11. Spread frosting on cooled cookies and garnish with crushed peppermint candies.

Notes

Ensure your butter is at room temperature for easy creaming. Don’t overmix the dough; mixing until just combined will preserve the cookies’ softness.
