A rich and comforting dish combining tender cheese tortellini with seasoned ground beef and vibrant spinach in a creamy garlic butter sauce.

  • 1 package (9 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 2 cups fresh spinach, chopped
  • Salt and pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 tablespoons butter (for the sauce)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the tortellini according to the package instructions. Drain the pasta and set it aside, reserving about 1/4 cup of the pasta water.
  2. Brown the ground beef in olive oil over medium heat. Season with salt and pepper and cook until well browned.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Then stir in the butter and chopped spinach, cooking until the spinach has wilted.
  4. Prepare the garlic butter sauce by melting butter in a separate pan, then adding heavy cream and simmering gently. Gradually stir in grated Parmesan cheese and season with salt and pepper.
  5. Combine the cooked tortellini with the beef and spinach mixture, tossing to combine evenly. Pour the garlic butter sauce over and mix well.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

Opt for fresh spinach for the best flavor. Customize proteins and add more vegetables as desired.
