A delightful combination of beef, spinach, and cheesy tortellini in a rich garlic butter sauce, perfect for quick dinners.

Ingredients

  • 1 package (9 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups fresh baby spinach leaves
  • 3 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup beef broth or water

Instructions

  1. Boil the tortellini according to package instructions, drain, and set aside.
  2. In a large pan, heat olive oil over medium-high heat, add ground beef and cook until browned, about 5 minutes.
  3. Add minced garlic, salt, black pepper, and optional red pepper flakes; cook for an additional 1-2 minutes.
  4. Lower the heat and add fresh spinach; sauté until wilted, about 2-3 minutes.
  5. Push mixture to one side of the pan and melt butter on the other side.
  6. Add tortellini and beef broth or water, mixing everything together for about 2 minutes.
  7. Sprinkle with Parmesan cheese and parsley; stir to combine and serve hot.

Notes

Add additional vegetables like bell peppers or mushrooms for extra nutrition. Customize greens by using kale or arugula.
