  • 2 chicken breasts, cut into bite-sized pieces
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp chopped parsley (for garnish)
  • 8 oz fettuccine or pasta of choice
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan (for topping)

Instructions

  1. Cook the Pasta: Begin by boiling water in a large pot. Add a pinch of salt and the fettuccine or pasta of your choice. Cook according to the package directions until al dente. Remember to save a little pasta water in case you need to loosen the sauce later!
  2. Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the bite-sized chicken pieces. Sear them until nicely browned on all sides, about 6-8 minutes. Season with salt, pepper, and Italian seasoning. Remove the chicken and set aside.
  3. Prepare the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.
  4. Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese, mixing until smooth. Bring the mixture to a gentle simmer.
  5. Combine Chicken with Sauce: Return the sautéed chicken to the skillet, tossing to coat in the creamy sauce. Cook for another 2-3 minutes, allowing flavors to meld.
  6. Serve and Garnish: Serve the chicken and sauce over the drained pasta. Top with freshly chopped parsley and an extra sprinkle of grated Parmesan cheese.
