Delicious roll-ups of lasagna noodles filled with creamy chicken, garlic, and cheese, perfect for dinner gatherings.

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup spinach, chopped (fresh or frozen)
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by boiling the lasagna noodles as per the package instructions until they are al dente. After draining, lay them flat on a clean kitchen towel to prevent them from sticking.
  2. In a large bowl, combine the shredded chicken, ricotta cheese, ½ cup of mozzarella cheese, Parmesan cheese, minced garlic, chopped spinach, Italian seasoning, salt, and pepper. Mix everything together until it’s a creamy and cohesive filling.
  3. Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce across the bottom of a baking dish.
  4. Take a cooked lasagna noodle and place a generous spoonful of the chicken filling at one end. Roll the noodle tightly and lay it seam-side down in the baking dish. Continue this for each noodle until your baking dish is full.
  5. Once you’ve finished rolling, pour the remaining marinara sauce over the top and sprinkle the remaining mozzarella cheese on top.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Allow the lasagna roll-ups to cool for a few minutes before serving. Garnish with fresh parsley.

Notes

Use high-quality cheeses for a richer taste. Ensure noodles are al dente to prevent breakage.
