A comforting and flavorful chicken meatloaf infused with garlic and Parmesan, perfect for family dinners.

  • 1 lb ground chicken
  • 1/2 cup Panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 egg, lightly beaten
  • 3 cloves minced garlic
  • 1/2 small onion, finely diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp freshly chopped parsley
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan cheese (for topping)
  • 2 tbsp melted butter (for topping)
  • 1 clove minced garlic (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking dish or loaf pan with parchment paper or lightly grease it.
  3. Combine the ground chicken, Panko breadcrumbs, grated Parmesan, shredded mozzarella, and the beaten egg in a large mixing bowl.
  4. Add the minced garlic, diced onion, Italian seasoning, salt, and pepper to the mixture.
  5. Sprinkle in the chopped parsley and mix everything gently until combined.
  6. Transfer the mixture to the prepared baking dish, shaping it into a loaf.
  7. Mix together the remaining Parmesan cheese, breadcrumbs, melted butter, and the final clove of minced garlic for the topping.
  8. Sprinkle the topping evenly over the meatloaf.
  9. Bake in the oven for 40-45 minutes, until golden brown.
  10. Remove from the oven and let it rest for 5-10 minutes before slicing.

Use fresh ingredients for the best flavor. A meat thermometer can help ensure the meatloaf reaches the safe internal temperature of 165°F (74°C).
