Combine the soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil in a small saucepan. Heat over medium heat while stirring occasionally. Bring to a gentle simmer and cook until the sauce thickens, about 5-7 minutes. Keep an eye on it to prevent burning.
Heat the olive oil in a large skillet over medium-high heat. Season the cod fillets with salt and pepper on both sides.
Add the cod fillets to the skillet. Cook for about 3-4 minutes on each side, until the fish is golden brown and firmly cooked through, reaching an internal temperature of 145°F (63°C).
Reduce heat to low and pour the ginger soy glaze over the fish. Let it cook for an additional 1-2 minutes.
Garnish with sesame seeds and chopped green onions before serving.
