A quick and impressive dish featuring tender cod fillets enveloped in a luscious ginger soy glaze.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 1 tbsp garlic, minced
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped (for garnish)

Instructions

  1. Combine the soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil in a small saucepan. Heat over medium heat while stirring occasionally. Bring to a gentle simmer and cook until the sauce thickens, about 5-7 minutes. Keep an eye on it to prevent burning.
  2. Heat the olive oil in a large skillet over medium-high heat. Season the cod fillets with salt and pepper on both sides.
  3. Add the cod fillets to the skillet. Cook for about 3-4 minutes on each side, until the fish is golden brown and firmly cooked through, reaching an internal temperature of 145°F (63°C).
  4. Reduce heat to low and pour the ginger soy glaze over the fish. Let it cook for an additional 1-2 minutes.
  5. Garnish with sesame seeds and chopped green onions before serving.

Notes

For more flavor, marinate the cod fillets in the glaze for 20-30 minutes before cooking.
