Aromatic gingerbread cookies covered in royal icing, perfect for holiday sharing and decoration.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 tsp vanilla extract
  • 2 large egg whites
  • 1 1/2 cups powdered sugar
  • 1/2 tsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt in a bowl.
  3. Cream together the softened unsalted butter and brown sugar until fluffy.
  4. Add the egg, molasses, and vanilla extract, mixing until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms.
  6. Wrap the dough in plastic and chill for at least one hour.
  7. Roll out the dough on a floured surface to 1/4 inch thick and shape with cookie cutters.
  8. Place the cookies on a baking sheet and bake for 8-10 minutes.
  9. Cool them on a wire rack.
  10. Beat the egg whites with powdered sugar and lemon juice until stiff peaks form for the royal icing.
  11. Decorate cooled cookies with royal icing and allow to set for 1-2 hours.

Notes

Chilling the dough is essential to retain the cookie shapes during baking.
