A delightful gingerbread cake infused with warm spices and rich molasses, perfect for holiday celebrations.

Ingredients

  • 2 1/2 cups of all-purpose flour
  • 1 1/2 teaspoons of ground ginger
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground cloves
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of unsalted butter, softened
  • 1 cup of dark brown sugar, packed
  • 2 large eggs
  • 1 cup of molasses
  • 1/2 cup of hot water
  • 1 cup of powdered sugar (for frosting)
  • 2 tablespoons of unsalted butter, softened (for frosting)
  • 2 tablespoons of milk (for frosting)
  • 1 teaspoon of vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it with butter and dusting it with flour.
  2. Whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt.
  3. Beat the softened butter and dark brown sugar until light and fluffy. Add the eggs one at a time, then stir in the molasses.
  4. Fold the dry ingredients into the wet mixture, alternating with the hot water.
  5. Pour the batter into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick comes out clean.
  6. Cool the cake in the pan for 10 minutes before transferring it to a wire rack.
  7. Mix together the powdered sugar, softened butter, milk, and vanilla extract for the frosting.
  8. Spread the frosting generously on top once the cake has completely cooled.

Notes

Avoid overmixing the batter to ensure a light cake. Cool the cake completely before frosting.
