Delicious homemade fries with a crispy exterior and cheesy richness from Parmesan.

Ingredients

  • 500 grams (1 lb) potatoes, peeled and cubed
  • 1 teaspoon salt (for boiling)
  • 1/3 cup fresh grated Parmesan cheese
  • 1/4 teaspoon fresh ground black pepper
  • 4 tablespoons potato starch
  • Fresh parsley, chopped
  • 1 tablespoon potato starch (for dusting)
  • Oil for frying

Instructions

  1. Bring a large pot of water to a boil and salt it with 1 teaspoon of salt.
  2. Add the cubed potatoes to the boiling water and cook until fork-tender, about 10-15 minutes.
  3. Drain the potatoes well and transfer them into a bowl.
  4. Mash the potatoes until smooth and free of lumps.
  5. Mix in the black pepper, chopped parsley, grated Parmesan cheese, and 4 tablespoons of potato starch until well combined.
  6. Divide the mixture into two equal portions and roll each into a dough ball.
  7. Roll out each dough ball into a rectangular shape about ½ inch thick and slice into thin strips.
  8. Heat oil in a deep fryer or large frying pan over medium-high heat.
  9. Fry the potato strips in batches for about 5-7 minutes, or until golden brown and crispy.
  10. Transfer the fries to a wire rack placed over paper towels to drain excess oil.
  11. Serve hot, optionally sprinkling with additional grated Parmesan.

Notes

Ensure potatoes are well drained after boiling for the best texture.
