  • 2 lbs. organic chicken (Drumsticks, Wings, or Thigh pieces)
  • 2 tsps sea salt, divided
  • 2 tsps black pepper, divided
  • 2 tsps smoked paprika, divided
  • 2 tsps garlic powder, divided
  • 2 tsps dried thyme, divided
  • 2 tsps dried parsley, divided
  • 2 tsps dried basil, divided
  • 1/2 cup organic all-purpose flour
  • 2 cups breadcrumbs
  • 2 cups cornflakes, crushed
  • 2 large eggs
  • 1 cup almond milk, unsweetened
  • 2 Tbsps hot honey
  • 6 Tbsps unsalted butter
  • 1/2 cup hot honey
  • 2 tsps cayenne pepper
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper and placing a wire rack on top.
  2. Combine the cleaned chicken pieces with the hot honey, along with 1 tsp each of salt, black pepper, smoked paprika, garlic powder, thyme, parsley, and basil. Mix well and allow to marinate for 5-10 minutes.
  3. Pat the chicken pieces dry using paper towels to ensure a crispy crust during baking. Then, coat each piece thoroughly with flour, shaking off any excess.
  4. In a separate bowl, combine the crushed cornflakes, breadcrumbs, and the remaining 1 tsp of spices. Mix until evenly dispersed.
  5. Whisk together the eggs and almond milk in another bowl until well blended.
  6. Dip each flour-coated chicken piece into the egg mixture, allowing any excess batter to drip off, and then coat it with the breadcrumb mixture.
  7. Arrange the coated chicken pieces on the prepared baking sheet. Bake them in the oven for 30-35 minutes, or until the chicken is thoroughly cooked and the coating is golden brown and crispy.
  8. Meanwhile, melt the butter in a skillet over medium-high heat. Then, add the remaining sauce ingredients: hot honey, cayenne pepper, chili powder, smoked paprika, garlic powder, and a pinch of salt. Stir until the mixture is smooth.
  9. Once the chicken has finished baking, carefully spoon the sauce over each piece, ensuring an even glaze.
  10. Serve hot with your favorite side dishes.

Notes

Marinating the chicken overnight enhances the flavors. Use gluten-free breadcrumbs for a healthier option.
