  • ½ cup mini Reese’s peanut butter cups, chopped
  • 8 oz cream cheese (for filling)
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract (for filling)
  • ¼ cup mini Reese’s peanut butter cups, chopped (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar in a large bowl until light and fluffy, then add the egg and vanilla extract.
  4. Beat in 8 oz of cream cheese until fully incorporated, then gradually add the dry ingredients until just combined.
  5. Fold in the chopped mini Reese’s.
  6. Mix the remaining cream cheese, powdered sugar, and vanilla extract in a separate bowl until smooth for the filling.
  7. Drop spoonfuls of cookie dough onto the baking sheet, creating indentations for the filling.
  8. Spoon cheesecake filling into each indentation.
  9. Bake for 10-12 minutes or until the edges are golden but centers remain soft.
  10. Cool on the baking sheet, then transfer to a wire rack to cool completely.

Notes

Ensure cream cheese and butter are at room temperature for a smoother blend. Don’t skip lining the baking sheet to avoid sticking.
