  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups mini Reese’s peanut butter cups, chopped
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. Combine the creamy peanut butter, softened unsalted butter, granulated sugar, and brown sugar in a large mixing bowl and beat until light and fluffy for about 2-3 minutes.
  3. Add the large egg and 1 teaspoon of vanilla extract, beating until fully combined and smooth.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chopped mini Reese’s peanut butter cups gently.
  7. Beat the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract in another bowl until smooth and creamy.
  8. Roll the dough into 1-inch balls and place them on the prepared baking sheet, pressing your thumb into the center to create a small well.
  9. Spoon about 1/2 teaspoon of the cream cheese mixture into each well.
  10. Bake for 10-12 minutes until golden brown on the edges but still soft in the center.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature ingredients for better texture, and don’t overmix the dough.
