Scale
  • 4 slices of rustic bread (sourdough or French bread)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cups cremini or white mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the unsalted butter and olive oil in a large skillet over medium heat until melted.
  3. Add the sliced mushrooms and cook until softened and browned, about 5 to 7 minutes.
  4. Stir in the minced garlic and thyme, cooking for another 1 to 2 minutes.
  5. Season with salt and pepper, adjusting to taste.
  6. Pour in the heavy cream and stir, cooking for an additional 2 minutes until the sauce thickens slightly.
  7. Toast the rustic bread slices in the oven or on a grill pan until golden-brown, about 5 to 7 minutes.
  8. Scoop the mushroom mixture onto each piece of toast.
  9. Sprinkle grated Parmesan and mozzarella cheese over the toasts.
  10. Bake in the oven for another 5 to 7 minutes until the cheese is melted and bubbling.
  11. Garnish with fresh parsley and serve immediately.

Notes

Ensure the mushrooms are browned properly for maximum flavor. You can substitute heavy cream with Greek yogurt for a lighter option.
