Indulge in the rich flavors of cremini mushrooms and a blend of cheeses atop crunchy sourdough bread, perfectly seasoned with garlic.

  • 400 grams sliced cremini mushrooms
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • 2 cloves garlic, finely minced
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Havarti cheese
  • 1/2 cup grated Swiss cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup green onions, thinly sliced
  • 4 slices sourdough bread

Instructions

  1. Cook the mushrooms: In a large skillet over medium-high heat, add the olive oil and butter. Once melted, introduce the sliced mushrooms along with salt and black pepper. Cook for about five minutes until tender.
  2. Add Worcestershire sauce: After the mushrooms have cooked, add the Worcestershire sauce and cook for another five minutes until they deepen in color.
  3. Prepare the cheese mixture: In a bowl, combine mayonnaise, sour cream, and melted butter. Whisk until homogenous. Mix in minced garlic, dried onion flakes, and black pepper.
  4. Incorporate the cheeses: Gradually fold in Parmesan, Havarti, Swiss, mozzarella, and sliced green onions until evenly distributed.
  5. Toast the bread: Preheat your oven broiler. Lay sourdough slices on a sheet pan and broil for 2-3 minutes until lightly browned. Flip and toast the other side until golden.
  6. Assemble the toasts: Fold cooled mushrooms into the cheese mixture. Generously spread the cheese mixture on each piece of toast. Top with reserved mushroom slices.
  7. Broil again: Place the sheet pan back under the broiler until the cheese bubbles and browns, about 3-5 minutes. Watch closely to avoid burning.
  8. Garnish and serve: Once the cheese is golden, remove from the oven and top with more sliced green onions. Serve immediately.

Consider using fresh herbs for added flavor, and feel free to experiment with different mushrooms. Leftovers can be stored for up to two days.
