Delightful cupcakes bursting with sweet and fizzy grape soda flavor perfect for any gathering.

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup grape soda
  • 1/4 cup milk
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons grape soda (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Purple food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the grape soda and milk.
  7. Divide the batter evenly between the 12 cupcake liners.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack.
  10. For the frosting, beat the softened butter until smooth and creamy.
  11. Gradually add the powdered sugar, one cup at a time.
  12. Add the grape soda and vanilla extract, mixing until smooth.
  13. Once the cupcakes have cooled, frost them with the grape soda frosting.

Notes

Consider using room temperature ingredients for the best texture. You can also add colorful sprinkles for decoration.
