A bright and zesty chicken dish infused with lemon and rich feta cheese, perfect for quick dinners or special occasions.

Ingredients

  • Juice and zest of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced (or 1 tsp dried garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp + a pinch of sea salt
  • 1/4 tsp coarse black pepper
  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh chopped parsley
  • Additional lemon wedges for serving

Instructions

  1. Combine lemon zest, lemon juice, olive oil, minced garlic, dried oregano, smoked paprika, sea salt, and black pepper in a large mixing bowl. Whisk until well combined and emulsified. Reserve 1/4 cup of the marinade for later.
  2. Add the thin-sliced chicken to the bowl with the remaining marinade, ensuring each piece is generously coated. Cover and refrigerate for at least 30 minutes.
  3. Heat a nonstick skillet over medium-high heat and add a splash of olive oil. Once hot, sear the marinated chicken until golden brown on one side (about 3-4 minutes). Flip the chicken and cook until the juices run clear (about another 3-4 minutes).
  4. Transfer the cooked chicken to a serving plate. Drizzle with the reserved marinade and top with crumbled feta cheese and chopped parsley. Serve with lemon wedges.

Notes

Marinate the chicken longer for deeper flavor. Consider adding cherry tomatoes or bell peppers for more color.
