  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced (or 1 tsp dried garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp + a pinch of sea salt
  • 1/4 tsp coarse black pepper
  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh chopped parsley
  • Additional lemon wedges for serving

Instructions

  1. Combine lemon zest, lemon juice, olive oil, minced garlic, dried oregano, smoked paprika, sea salt, and black pepper in a large mixing bowl. Whisk together until well combined and emulsified, creating a flavorful marinade. Reserve 1/4 cup of the marinade for later.
  2. Add the thin-sliced chicken to the bowl with the remaining marinade, ensuring each piece is generously coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  3. Heat a nonstick skillet over medium-high heat and add a splash of olive oil. Once hot, sear the marinated chicken until it turns golden brown on one side, about 3-4 minutes. Carefully flip the chicken and cook until the juices run clear, about another 3-4 minutes.
  4. Transfer the cooked chicken to a serving plate. Drizzle it with the reserved marinade and top with crumbled feta cheese and chopped parsley. Serve with lemon wedges on the side.

Notes

For a deeper flavor, marinate the chicken for up to 2 hours. Ensure the skillet is hot before cooking to achieve a perfect sear.
