Delightful Greek meatballs simmered in a tangy lemon sauce, perfect for family dinners or special gatherings.

  • 1 small onion, finely grated
  • 1/4 cup uncooked arborio rice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • Salt and black pepper to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs
  • Juice of 2 lemons (about 1/4 cup)

Instructions

  1. Combine the ground beef, finely grated onion, uncooked arborio rice, chopped parsley, chopped dill, egg, dried oregano, salt, and black pepper in a large mixing bowl. Mix gently to keep the meatballs tender.
  2. Shape the mixture into golf ball-sized meatballs and chill them in the refrigerator for 15–20 minutes.
  3. Heat the chicken broth and olive oil in a pot, bringing it to a gentle simmer.
  4. Add the meatballs to the pot, cover, and reduce heat to low. Cook for about 30 minutes.
  5. Whisk together the two eggs and lemon juice in a separate bowl, tempering with hot broth gradually.
  6. Pour the tempered egg mixture back into the pot, stirring gently over low heat to thicken the sauce.
  7. Serve the meatballs with the tangy lemon sauce, garnished with herbs or lemon wedges.

Notes

Consider adding crushed garlic for extra flavor. Use different ground meats for varied taste.
