Tender meatballs enveloped in a rich, tangy lemon sauce, perfect for family dinners or casual gatherings.

  • 1 small onion, finely grated
  • 1/4 cup uncooked arborio rice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 egg
  • Salt and black pepper to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs
  • Juice of 2 lemons (about 1/4 cup)

Instructions

  1. Combine the ground beef, finely grated onion, arborio rice, parsley, dill, egg, oregano, salt, and pepper in a large bowl.
  2. Mix gently to keep the meatballs tender.
  3. Shape the mixture into golf ball-sized meatballs and chill in the refrigerator for 15–20 minutes.
  4. Bring the chicken broth and olive oil to a gentle simmer in a pot.
  5. Add the meatballs to the pot, cover, and reduce heat to low.
  6. Cook for about 30 minutes until the meatballs are juicy.
  7. Whisk together the two eggs and lemon juice in a bowl.
  8. Temper the egg mixture by adding hot broth gradually while whisking.
  9. Pour the tempered egg mixture back into the pot, stirring over low heat to thicken the sauce.
  10. Serve the meatballs with the lemon sauce, garnished with herbs or lemon wedges.

Notes

Chill the meatballs before cooking to help keep their shape and use good quality chicken broth for the best flavor.
