  • 1 lb ground beef
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup chopped parsley (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 lb of ground beef and cook until browned, about 5-7 minutes.
  3. Set aside the cooked beef.
  4. Toss in the chopped onion and minced garlic, and sauté until soft, about 3-4 minutes.
  5. Add the diced potatoes and stir gently for about 10-15 minutes until they start to soften.
  6. Return the ground beef to the skillet, along with 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.
  7. Stir everything together and pour in 1 cup of beef broth.
  8. Cover the skillet and let it simmer for 15-20 minutes.
  9. Garnish with chopped parsley before serving.

Notes

For a healthier alternative, use ground turkey or chicken. This dish freezes well for up to 3 months.
