Irresistible grilled Huli Huli Chicken with a blend of sweet, tangy, and savory flavors, perfect for summer barbecues and family gatherings.

  • 45 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup canned pineapple juice
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon smoked or sweet paprika
  • Pineapple rings (1 pineapple or 1 can of slices, drained)
  • ½ cup sliced green onions for garnish

Instructions

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels.
  2. Combine all ingredients excluding the chicken and pineapple rings in a large bowl or a Ziploc bag.
  3. Mix everything thoroughly to ensure that the flavors meld together beautifully.
  4. Set aside ½ cup of the sauce mixture for later serving.
  5. Add the chicken thighs to the remaining marinade and ensure they are well-coated.
  6. Refrigerate for at least 4 hours, preferably overnight.
  7. Preheat your grill to medium-high heat (around 400°F).
  8. Grill the chicken thighs for about 10 minutes per side, or until the internal temperature reaches 165°F.
  9. Toss the pineapple rings on the grill alongside the chicken.
  10. Discard the used marinade and brush reserved marinade over the chicken just before serving.

Notes

For best flavor, marinate chicken overnight. Always use a meat thermometer to ensure proper doneness.
