Effortless and delicious chicken tacos made in a crockpot for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning (or about 2 tablespoons homemade seasoning)
  • 1/2 cup low-sodium chicken broth (or water)
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • Corn or whole wheat tortillas, warmed
  • Optional toppings: chopped cilantro, diced tomatoes, creamy avocado slices, crunchy shredded lettuce, zesty lime wedges, low-fat shredded cheese, Greek yogurt or light sour cream

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour in the salsa and low-sodium chicken broth over the chicken, adding the onion and garlic if using.
  4. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, carefully shred the chicken in the crockpot using two forks.
  6. Warm the tortillas in a skillet or microwave.
  7. Assemble your tacos by adding the shredded chicken onto a warm tortilla with your favorite toppings.
  8. Serve and enjoy your comforting meal!

Notes

For a quicker method, sauté chicken and spices on the stovetop before adding salsa. Ensure chicken is fully submerged for maximum moisture.
