Ingredients

  • 1 lb ground beef, browned
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced potatoes
  • 1 small onion, diced
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat, breaking it up as it cooks. Once browned, drain excess fat.
  2. Combine the browned beef with diced tomatoes, corn, pinto beans, diced potatoes, and onion in your Crock Pot.
  3. Add beef broth to create a rich soup base.
  4. Season with chili powder, garlic powder, smoked paprika, salt, and pepper.
  5. Cook on low for 6–8 hours or high for 3–4 hours.
  6. Serve warm, ladling into bowls with crusty bread or crackers.

Notes

For a healthier option, substitute ground turkey or chicken for beef. Adjust spices and add vegetables as desired.
