  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • Zest of 1 lemon for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract and shredded coconut.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Add the dry mixture to the buttery blend, stirring until a dough forms.
  6. Roll tablespoon-sized balls of dough and place them 2 inches apart on the baking sheet.
  7. Create an indent in the center of each ball for the lemon curd.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Fill the indents with lemon curd and garnish with lemon zest.
