A delightful tropical dessert that combines soft cake with sweet, tangy pineapple for a heavenly experience.

  • 1 box yellow cake mix
  • 1 cup crushed pineapple, drained
  • 1/2 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup whipped topping
  • 1/4 cup shredded coconut (optional for garnish)
  • Maraschino cherries (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing and lightly flouring it.
  2. Follow the package instructions for the yellow cake mix, and gently fold in the drained crushed pineapple.
  3. Pour the batter into your prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow the cake to cool completely in the pan on a wire rack.
  5. Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth to create the frosting.
  6. Fold in the whipped topping gently.
  7. Spread the cream cheese mixture evenly over the cooled cake.
  8. Garnish the cake with shredded coconut and maraschino cherries.
  9. Refrigerate the cake for at least 2 hours before serving.

Notes

Ensure to drain the crushed pineapple well to avoid excess moisture. Don’t skip the cooling step to prevent the frosting from melting.
