  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar

  • 1 cup crushed pineapple, drained
  • 1/2 cup milk
  • 1 cup white chocolate chips, melted
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla until incorporated.
  5. Fold in the crushed pineapple and milk, then gradually add the dry ingredients until just combined.
  6. Stir in the melted white chocolate chips until smooth.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean. Cool in the pans for 10 minutes before transferring to a wire rack.
  9. Beat the cream cheese and powdered sugar until smooth. Gradually add the heavy cream and vanilla, continuing to beat until thick and fluffy. Fold in the melted white chocolate chips.
  10. Spread frosting between the layers and on the top and sides of the cooled cake. Optionally garnish with white chocolate shavings or fresh pineapple slices.
  11. Slice, serve, and enjoy!
