8 oz white chocolate, chopped
1 1/2 cups heavy cream
1 tsp vanilla extract
1 cup fresh raspberries
1 tbsp sugar
1 tsp lemon juice
1/4 cup crushed graham crackers (optional)

Instructions
Make the White Chocolate Mousse: Melt the chopped white chocolate over a double boiler or microwave in 30-second intervals. Allow to cool slightly. In another bowl, whip the heavy cream until stiff peaks form and gently fold in the white chocolate and vanilla extract.
Prepare the Raspberry Layer: In a saucepan, combine fresh raspberries, sugar, and lemon juice. Cook over low heat until soft and syrupy, then allow to cool.
Assemble the Parfait: Layer crushed graham cracker crumbs, raspberry mixture, and white chocolate mousse in serving glasses. Repeat layers and chill for at least 2 hours.
Garnish each parfait with fresh raspberries before serving.
