  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Fold in the crushed pineapple and milk until well combined. Gradually add the dry mixture, mixing until just combined.
  6. Stir in the melted white chocolate chips until the batter is smooth.
  7. Divide the cake batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes.
  9. Beat the softened cream cheese and powdered sugar together until smooth. Add heavy cream and vanilla, beating until thick and fluffy. Fold in the melted white chocolate chips.
  10. Once the cake layers have cooled, spread frosting on top of one layer and place the second layer on top. Frost the entire cake with the remaining frosting.
