A delightful lamb dish featuring an aromatic blend of herbs, garlic, and spices, perfect for any occasion.

  • 8 medium-sized Lamb Chops
  • 1 teaspoon Black Pepper
  • 2 teaspoons Salt
  • 1 tablespoon Dried Oregano
  • 1/2 teaspoon Onion Powder
  • 2 teaspoons Dried Thyme
  • 1/2 tablespoon Smoked Paprika
  • 34 Garlic Cloves, minced
  • 1/2 Red Bell Pepper
  • 1/4 cup Olive Oil
  • Juice from 1/2 Lemon
  • Fresh Parsley for garnish

Instructions

  1. Begin by processing or blending the red bell pepper, fresh parsley, and garlic into a coarse mixture.
  2. Next, on a sturdy chopping board, divide the lamb rack into 8 chops.
  3. In a mixing bowl, combine the lamb chops with your bell pepper mixture along with the remaining ingredients.
  4. Cover the bowl with a cloth or plastic wrap and let the lamb marinate in the refrigerator for at least one hour.
  5. Preheat your oven to 400°F (200°C).
  6. Heat about 2 tablespoons of olive oil in a cast iron skillet over medium heat.
  7. Sear each lamb chop for 1-2 minutes on each side.
  8. Once all the chops are seared, transfer them to the skillet.
  9. Place the skillet into the preheated oven.
  10. Bake for 2-5 minutes for medium-rare, or 5-10 minutes for medium to well-done.
  11. To serve, plate the lamb chops and garnish with fresh parsley.

Notes

Let the lamb marinate overnight for deeper flavor. Adjust herbs to your taste.
