A delightful appetizer that envelops creamy mozzarella balls in aromatic olive oil, crunchy garlic, and fragrant herbs.

Ingredients

  • 8 oz fresh mozzarella balls
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon
  • 1/2 cup balsamic vinegar (optional)

Instructions

  1. Start by draining your mozzarella balls and letting them rest in a colander.
  2. After about 10 minutes, pat them dry gently with a soft paper towel.
  3. In a medium mixing bowl, combine the extra virgin olive oil, minced garlic, and the chopped fresh basil and oregano.
  4. Add red pepper flakes, salt, and black pepper to taste.
  5. Mix in the zest of the lemon.
  6. Gently add the dried mozzarella balls to the bowl.
  7. Cover the bowl tightly with plastic wrap and place it in the refrigerator.
  8. Marinate for at least two hours; overnight is ideal.
  9. Just before serving, drizzle with balsamic vinegar if desired.

Notes

For best results, always use fresh mozzarella and allow for proper marination time.
