A delightful appetizer featuring creamy fresh mozzarella marinated in olive oil, garlic, and fragrant herbs, perfect for any gathering.

Ingredients

  • 8 oz fresh mozzarella balls (bocconcini or ciliegine)
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon
  • 1/2 cup balsamic vinegar (optional)

Instructions

  1. Drain your mozzarella balls, letting them rest in a colander.
  2. Pat them dry with a soft paper towel.
  3. Combine the olive oil, minced garlic, chopped basil, and oregano in a medium mixing bowl.
  4. Add red pepper flakes, salt, and black pepper to taste.
  5. Mix in the zest of lemon.
  6. Gently add the dried mozzarella balls, turning them to coat.
  7. Cover the bowl tightly with plastic wrap and refrigerate.
  8. Marinate for at least two hours; overnight is ideal.
  9. Drizzle with balsamic before serving, if using.

Notes

Ensure mozzarella is well dried to avoid a watery marinade. Serve with crusty bread to soak up the marinade.
