  • 1/2 cup finely chopped peaches
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Combine the all-purpose flour, baking powder, baking soda, and salt in a large mixing bowl.
  3. Beat together the softened butter and sugar until creamy. Add the eggs one at a time, mixing in vanilla and sour cream until smooth.
  4. Gradually add the dry ingredients to the wet mixture, folding in chopped peaches gently.
  5. Spoon the batter into muffin cups, filling them two-thirds full. Bake for 18-20 minutes.
  6. Let the cupcakes cool in the tin for a few minutes, then transfer to a wire rack.
  7. Beat the cream cheese and butter for the frosting until smooth. Gradually add the powdered sugar, honey, and vanilla.
  8. Frost the cooled cupcakes generously with the cream cheese frosting.
