A delightful Hawaiian dish featuring grilled chicken marinated in a sweet and savory sauce, perfect for family dinners or summer barbecues.

  • 45 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup canned pineapple juice
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon smoked or sweet paprika
  • Pineapple rings (1 pineapple or 1 can of slices, drained)
  • ½ cup sliced green onions for garnish

Instructions

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels.
  2. Combine all ingredients excluding the chicken and pineapple rings in a large bowl or Ziploc bag.
  3. Mix everything thoroughly.
  4. Set aside ½ cup of the sauce mixture for later serving.
  5. Add the chicken thighs to the remaining marinade and ensure they are well-coated.
  6. Cover the bowl or seal the bag, then refrigerate for at least 4 hours, preferably overnight.
  7. Preheat your grill to medium-high heat (around 400°F).
  8. Oil the grates to prevent sticking.
  9. Grill the chicken thighs for about 10 minutes per side, or until the internal temperature reaches 165°F.
  10. Toss the pineapple rings on the grill alongside the chicken, grilling until golden (about 3-4 minutes per side).
  11. Discard the used marinade and brush reserved marinade over the chicken just before serving.

Notes

For deeper flavor, marinate the chicken overnight. Adjust the marinade by adding spice or sesame oil for a unique twist.
