A savory meatloaf that combines the rich flavors of caramelized onions and melted cheese, cooked to perfection in a crock pot.

  • 1 1/2 pounds ground beef
  • 1 cup French onion soup
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 onion, sliced
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a large mixing bowl, combine the ground beef, French onion soup, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, salt, pepper, and Worcestershire sauce. Mix until just combined.
  2. Form the mixture into a loaf shape and place it in your crock pot.
  3. Layer the sliced onions on top of the meatloaf.
  4. Cover the crock pot and set it to cook on low for 6 to 8 hours.
  5. In the final 30 minutes, sprinkle shredded mozzarella cheese over the top of the meatloaf and cover again to allow the cheese to melt.
  6. Once cooked, remove the meatloaf from the crock pot and let it rest for a few minutes before slicing.

Notes

For added flavor, sauté the sliced onions in a bit of olive oil or butter before layering. Leftovers can be stored in an airtight container for up to 3 days.
