1 1/2 pounds of ground beef
1 cup of creamy French onion soup
1 cup of Italian-style breadcrumbs
1/2 cup of grated Parmesan cheese
1/4 cup of chopped fresh parsley
2 cloves garlic, minced
1 teaspoon of salt
1/2 teaspoon of black pepper
1 tablespoon Worcestershire sauce
1 onion, sliced
1 cup of mozzarella cheese, shredded
Instructions
Combine the ground beef, French onion soup, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, salt, pepper, and Worcestershire sauce in a large mixing bowl.
Form the mixture into a loaf shape and place it in your crock pot.
Layer the sliced onions on top of the meatloaf.
Cover the crock pot and set it to cook on low for 6 to 8 hours.
Sprinkle shredded mozzarella cheese over the top of the meatloaf in the final 30 minutes and cover again to allow the cheese to melt.
Remove the meatloaf from the crock pot and let it rest for a few minutes before slicing.
Notes
For a healthier version, substitute ground turkey, use whole wheat breadcrumbs, or add finely grated vegetables.
